Chicken Soup

Makes roughly 6-8 serves

Ingredients

·       2 large carrots peeled and chopped 

·       2x large celery stalks chopped

·       1 cup broccoli florets chopped

·       1 leek diced (or greens of an onion for low FODMAP option)

·       1 tbsp olive oil 

·       1 tbsp. fresh ginger

·       2 chicken fillets cut into small cubes

·       1L low sodium chicken stock – Massell’s Brand = low FODMAP

·       200g Wokka Wholegrain Noodles

·       Couple of pinches of Tuscan spice or cracked pepper or chilli flakes for added flavour

·       Extra water if required

Method

1.     In a deep pot, add oil, garlic and all vegetables – cook until the onion is translucent

2.     Add fresh ginger, stock and sliced chicken breast fillets

3.     Bring the soup to boil and cook through until the chicken is opaque and completely cooked through

4.     Towards the end, add your noodles and stir through

5.     Add any extra spices or flavours to your liking at the end (can always add extra water to increase the volume of the soup too!)

6.     Enjoy!!
