Chicken Parmi

Ingredients

  • 500g chicken breast schnitzel fillets (Macro Woolworths sell them or a local butcher)

  • 1 tbsp. olive oil

  • 1.5 tsp. crushed garlic

  • 12.5g (1/2 pack) McCormick Katsu crumb

  • 1/4 cup Krummies Breadcrumbs

  • 400g diced canned tomatoes (salt reduced/no salt added)

  • Parmesan/Mozzarella cheese to sprinkle on the top

  • 2x medium zucchini’s to make “zoodles” (or the buy the pack already prepared from Woollies/Coles

  • Some herbs to sprinkle on the finished dish :)

  1. In a shallow bowl, toss the breadcrumbs, katsu crumb, minced garlic and oil.

  2. Prepare the chicken breast schnitzel and add to the bowl with crumb mixes - coat generously

  3. Add the crumbed chicken with garlic and oil to fry pan and cook for about 3-minutes on each side or until golden crisp. Remove from heat and place onto an oven tray with foil.

  4. Bake for another 5-10-minutes or until fully cooked inside. Next add the tomato sauce and sprinkle of mozzarella cheese. Return to the oven for a couple of minutes.

  5. Whilst the chicken is finishing, microwave the zucchini for about 30-60 seconds. Add the finished chicken on top and serve with a sprinkle of herbs!

Since this recipe is low in carbohydrate as the crumbing is the only source, depending on your goals, add spiralled sweet potato with the zucchini or a medium corn cob to balance the meal out.

Note: this can be made vegan or vegetarian friendly (depending if you use cheese or not) by using the Vegie Delights crumbed schnitzel which are one of the best brands for matching essential animal protein macro (protein) and micronutrients (B12, Zinc, Iron). They are also low in saturated fat and high in fibre.
