Nourishing Oat Cookies

Who does’t love a nutrition loaded oat cookie!?

I made these when I was breastfeeding to help boost my total protein, soluble fibre, Omega-3 fats, magnesium, zinc for good recovery and anti-inflammatory benefits.

Ingredients

  • 2 cups rolled oats

  • ½ cup plain flour or brown rice flour

  • 1/3 cup LSA

  • ½ tsp. ground cinnamon

  • Pinch of salt

  • 2.5 tbsp. brewers yeast

  • 1 tsp. baking powder

  • 3/4 cup plain high protein yoghurt (or soy yoghurt)

  • 2 tbsp. extra virgin olive oil or rice bran oil

  • 1 tbsp. vanilla essence

  • 2 tbsp. honey or low sugar maple syrup

  • 2 tbsp. coconut sugar

  • 1/3 cup dark chocolate chips

  • 1/4 cup shredded or desiccated coconutMethod


Method

  1. Preheat the oven to 250 degrees Celsius

  2. In a large bowl, whisk together dry ingredients (not the choc chips or coconut)

  3. Using a wooden spoon, mix the wet ingredients slowly into the dry ingredients bowl and ensure well combined. The mixture will be quite thick.

  4. Stir in the chocolate chips and desiccated coconut

  5. Using a dessert spoon, scoop the mixture and make cookies into a golf sized ball (or a touch bigger) and place on a sprayed baking sheet a few centimetres apart.

  6. Bake cookies for 15-20-minutes or until golden brown
