Lockdown Meal Inspo

To keep motivation high and to provide you, your friends and family some inspiration during this time, I have compiled four comforting meal ideas using ingredients from the Shell Cove Source Bulk Foods Store!

1. Veggie Pasta Bake

  • Pasta from ShellCove Source Bulk Foods - all pasta variations are high in protein and fibre, and if you have children, the tomato and spinach zoo pasta shapes are a great choice!

  • Tomato Passata

  • Chopped broccoli, cauliflower and zucchini

  • Optional added protein: shredded chicken

Nutrition Benefit: using a whole grain pasta including the spinach and tomato variety that I linked above provides a great source of fibre and high plant based protein content to help you feel fuller for longer, prevent overeating and provides a nutrient dense meal.

2. Salmon Patties coated with lupin flakes

  • Canned red salmon

  • Pumpkin (fresh or for convenience frozen chunks are also available)

  • Eggs

  • Lupin flakes

  • Serve with a side salad or medley of roasted or pan-fried winter vegetables

Nutrition Benefit: have you heard of lupin flakes before? Well, now you have!! They are a member of the legume family, grown and processed in Australia. Lupin is a wonderful source of protein and dietary fibre and provides a beautiful “golden” crisp crumb for coating meats like chicken, lean red meat or fish or for patties like these salmon patties.

3. Quinoa Flake Porridge

  • Quinoa Flakes

  • Milk of choice (when choosing plant based milk, ensure the milk is fortified with calcium)

  • Fruit (for example, sliced banana, tossed berries or stewed apple)

  • Crunchy topper (for example, coconut flakes or crushed or whole nuts and seeds)

Nutrition Benefit: quinoa is an awesome grain, high in fibre, protein and iron. Top this grain with a milk fortified with calcium, Vitamin D and B vitamins, a little fruit for extra fibre and antioxidant benefit plus a crunchy topper that is also dense in healthy fats. There we have it, a winning breakfast meal!

4. Comforting Dhal

  • Organic split red lentils

  • Crushed canned tomatoes

  • Mixed vegetables of your choice - pumpkin, spinach, chopped tomatoes work well

  • Canned low fat coconut milk

  • Spices & herbs of your choice


Nutrition Benefit: oh Dahl! Not only is it comforting, this dish is so hearty as it packs plenty of plant based protein, fibre, rich vitamins and minerals including non-haem iron, potassium and B Vitamins.
