Australia Day BBQ Dukkah Prawns & Mango Salsa Salad

Ingredients
Prawn Skewers
1kg of uncooked large king prawns
2 tbsp. of pistachio dukkah (I use the table of plenty brand available at Woolworths & Coles)
2 tbsp. olive oil
1 tbsp. lemon juice
2 tsp. minced garlic
salt and pepper to your tasting
Greek yoghurt
Mango Salsa Salad
1x large mango finely diced
1/2 red onion finely diced (optional)
1x medium carrot finely chopped
1 large tomato finely diced
1 cucumber finely diced
2 tbsp. lime juice
handful of chopped mint leaves
Method
To prepare the prawns, peel and clean well. In a large bowl combine olive oil, dukkah, lemon juice and minced garlic. Add prawns and mix and coat well. Thread the prawns onto your skewers, about 3-4 prawns per skewer. Heat the prawns on a BBQ plate until they change colour and are cooked through.
To prepare the mango salsa salad finely dice all ingredients. Toss together in a bowl with lime juice and chopped mint leaves. Serve on the side of the prawn skewers for the perfect flavour balance!
