Festive Inspired Side Salad

Ingredients

  • 2 cups brussel sprouts - chopped thinly

  • 1x bunch of radish - chopped thinly

  • 1/2 cup slivered almonds

  • 1x small fennel sliced

  • 2 tbsp. lemon juice

  • 1 tbsp. avocado/olive oil

  • 1 tsp. minced garlic

  • pinches of chopped mint

On the side: Greek yoghurt with a dash of lemon juice and mint for people to drizzle as they desire on the salad

Method

  1. Chop and slice all vegetable ingredients and toss in a large salad bowl

  2. Add lemon juice, olive/avocado oil, minced garlic and chopped mint to the salad and toss to combine well

  3. Sprinkle the slivered almonds across the top of the salad

  4. Add the side of yoghurt dip or drizzle lightly across the top of the salad

  5. Enjoy alongside any roast of choice and add some crispy baked potatoes or bread for some balance!
