Super Simple Tofu Coconut Rice Stir Fry
Serves 4
Ingredients
450g Firm tofu
2 tsp. olive oil
1 tbsp. Sesame oil
1 tbsp. Soy sauce
2 tsp. minced garlic
sprinkle of chilli flakes
2-3 cups frozen stir fry vegetables
4 handfuls of baby spinach
1x 250g basmati coconut rice
Method
Drain the tofu and slice into small cubes
Heat a medium pan with olive oil and minced garlic
Add the tofu pieces, cooking for about 3-5-minutes
Add stir fry vegetables to the pan and combine with the tofu - cook for a further 5-minutes
Add the soy sauce, sesame oil and chilli flakes
Once flavours are combined into the mix of vegetables and tofu, you can choose to add the rice to the pan for a further 2-minutes or microwave the rice as per instructions and serve separately with the tofu, vegetables & spinach.
