Festive Creamy Trifle - A Dietitian’s Take!
Hoorah! Its the festive time again and I want to know…are you fond of trifles?
Honestly, I never used to be until (bias alert!) I tried making my own. My father absolutely loves anything with cream and cakes, especially creamy trifles. Thus, I am constantly experimenting with new ways to create healthier treats that the entire family can enjoy. Previously, I didn't quite enjoy trifles because they felt excessively rich and heavy. That's why last year, I decided to take on the challenge of crafting a healthier version of the traditional trifle... and voila! It turned out to be a resounding success! Details below!
You will need the following:
Fruit: peaches, nectarines, strawberries, blueberries, raspberries, mango (chopped)
Vanilla Yoghurt (great brands include the following vanilla flavours: Yopro, Chobani no added sugar or Jalna) (the idea is to make sure its a thick alternative, thus why all these brands work really well!)
Low fat custard
Homemade vanilla sponge cake (optional to soak in rum) Here is a great low sugar option.
Low sugar jelly cubes (such as Aeroplane Lite) or could make your own jello? (also optional)
Toppings: wafer sticks, mini merengues and lots of chopped fruit!!

How to assemble: you can go rogue or have a specific order to the food component - up to you!!
Start with a sturdy base: thick layer of sponge cake to hold the layers of creaminess, jelly & fruit
Next add a layer of yoghurt and custard
Throw in some jelly cubes and chopped fruit - press them close to the glass for a vibrant colour
Repeat the process: cake, custard, yoghurt, jelly cubes and fruit
Once you reach the top, add a vibrant mix of chopped fruit & place the mini meringue into empty gaps
