Fresh Spring Pasta Salad
Serves 4
Ingredients
250g chickpea spiral pasta (I used San Remo)
2 handfuls of baby spinach
handful of cherry tomatoes cut in half
1 small red capsicum thinly sliced
1 medium cucumber thinly sliced
1/2 red onion thinly sliced
1/2 block of feta cheese (slice into cubes or crumble into the pasta)
1 tbsp. olive oil
1 tbsp. lemon juice
2 tsp. minced garlic
Optional: extra protein - smoked salmon or poached shredded chicken would work really well in this recipe
Method
Prepare the pasta following the packet instructions. Once cooked, drain water and let the pasta cool on the side
Prepare sliced vegetables into a large bowl
Once pasta has cooled slightly, add to the vegetables and combine well
Add oil, lemon and minced garlic. Mix well.
Add the sliced or feta cheese and mix through the salad
If adding extra protein, add this on the side or mix through the salad well
Serve and enjoy! This meal can be served as a side to a main meal or on its own since the chickpea pasta has a higher protein content than other pasta’s.
