Fresh Spring Pasta Salad

Ingredients

  • 250g chickpea spiral pasta (I used San Remo)

  • 2 handfuls of baby spinach

  • handful of cherry tomatoes cut in half

  • 1 small red capsicum thinly sliced

  • 1 medium cucumber thinly sliced

  • 1/2 red onion thinly sliced

  • 1/2 block of feta cheese (slice into cubes or crumble into the pasta)

  • 1 tbsp. olive oil

  • 1 tbsp. lemon juice

  • 2 tsp. minced garlic

  • Optional: extra protein - smoked salmon or poached shredded chicken would work really well in this recipe

Method

  • Prepare the pasta following the packet instructions. Once cooked, drain water and let the pasta cool on the side

  • Prepare sliced vegetables into a large bowl

  • Once pasta has cooled slightly, add to the vegetables and combine well

  • Add oil, lemon and minced garlic. Mix well.

  • Add the sliced or feta cheese and mix through the salad

  • If adding extra protein, add this on the side or mix through the salad well

  • Serve and enjoy! This meal can be served as a side to a main meal or on its own since the chickpea pasta has a higher protein content than other pasta’s.
