Tasty Smoked Salmon Open Sandwich

Serves One

Ingredients:

  • 1x large slice of soy and linseed sourdough

  • 2x slices of smoked salmon (Tassal’s salt reduced)

  • 1/4 avocado sliced

  • 1/2 cup pea and mint smash - 2 tbsp. of cooked peas and 1 tbsp. mint paste (smash well together with a fork)

  • 1 tbsp. crumbled feta

  • 1x handful of chopped baby spinach leaves

Optional Add On’s (or to replace the smoked salmon) depending on individual goals and likes/dislikes:

  • poached/scrambled eggs

  • smashed edamame beans (vegetarian protein alternative)

  • scrambled tofu (vegetarian protein alternative)

Putting it together:

  • Optional to toast or keep the bread fresh

  • Once the peas and mint are smashed together, spread evenly onto the toasted/fresh bread

  • Add sliced avocado, smoked salmon, then sprinkle the feta and spinach on top (or you can smear the feta with the peas at the bottom like I have in the images above!)

  • Enjoy!
