Savoury Mince & Veg Dish

Serves 5

One pot to cook - super quick and easy!

What you will need

  • 500g extra lean beef mince (+ olive oil for the fry pan)

  • 400g can of chickpeas (salt reduced) (1x 250g microwave bag long grain brown rice*)

  • 2x medium carrots (chopped into cubes)

  • 200g mushrooms sliced (oyster mushrooms*)

  • 100g green beans (thinly sliced)

  • 1x medium brown onion (diced) (greens of spring onion*)

  • can of diced tomatoes (salt reduced)

  • 2 tbsp. lime juice

  • 3 garlic cloves (minced) (1 tbsp. garlic infused oil*)

  • 3 tsp. fresh/dried ginger

  • Sprinkle of Moroccan spice

  • 1x small chilli or a sprinkle of dried chilli flakes

How to prepare this yummy and nutritious dish!

  1. Prepare all vegetables (onion, carrots, mushrooms, green beans and canned tomatoes)

  2. In a medium hot fry pan, drizzle some olive oil and add minced garlic and chopped onion

  3. After 1-minute, add the beef mince and cook through until browned.

  4. Add the can of tomatoes, lime juice, rest of the garlic, ginger, spice and chili - mix through until combined

  5. Add the carrots, green beans and chickpeas

  6. Simmer and stir occasionally until all cooked through

  7. Then add the mushrooms, mix and combine well

  8. Voila! Served :)

  9. Ps. instead of the chickpeas, replace with brown rice, wholegrain noodles or even make a burrito style wrap!
