Tofu Edamame Bowl
Serves 4
Ingredients
o 200g vermicelli noodles
o 2 medium carrots
o 100g bean sprouts
o 1 large cucumber
o ½ red cabbage
o 1 red capsicum
o 1 cup edamame beans
o 400g firm tofu
o Dressing: 2 tbsp. lime juice + ½ tsp brown sugar + 1 tbsp. miso paste + 1 tbsp. tamari + tbsp. toasted sesame seeds
Method
Boil water and cover noodles with boiling water, set aside for 5-minutes, soak & drain.
Slice tofu into strips, sprinkle with sesame seeds and drizzle with oil. Saute on a medium to hot sauce pan for 5-minutes turning over half way through.
Combine sliced carrots, cucumber, cabbage, capsicum, edamame, coriander, bean sprouts
Mix the dressing together
Add the noodles and tofu to the mixed vegetable salad
Mix the sauce through or drizzle on top
